This strawberry chia matcha pudding is paleo-friendly, ketogenic, low-carb, vegan, and gluten-free, and is bursting with nutrient-packed components:

Firstly, we have chia seeds, which are a good source of antioxidants, amino acids, minerals, fiber, omega-3s, and protein.

Next up, strawberries, which are also a great source of antioxidants, as well as vitamins and minerals including potassium, folate, manganese, dietary fiber, and magnesium. Strawberries also boost immunity, promote eye health, fight bad cholesterol, reduce inflammation, and regulate blood pressure. Above all, they can help fight cancer. Strawberries contain lutein and zeathancins, which are scavengers to free radicals that can cause cancer in the cells.

Also, pistachios! These promote a healthy heart, help with weight management, can protect against diabetes and hypertension, and can improve digestion. Pistachios also have lots of vitamins, minerals, and protein.

Last, and certainly not least, Matcha green tea powder, which is a fighter against type 2 diabetes, Alzheimer’s disease, heart problems, high cholesterol and blood pressure, and some forms of cancer, including stomach, throat, breast, colon, bladder, and prostate cancers. Matcha powder also boosts your immune system and detoxifies your body.

Strawberry Chia Matcha Pudding Recipe

Ingredients
  • 1 1/2 cups coconut milk
  • 4 strawberries, diced
  • 1 teaspoon Matcha Do About Matcha green tea powder
  • 3 tablespoons chia seeds
  • Honey (optional)
  •

    Directions
  • Put the coconut milk, matcha powder, chia seeds, and sweeteners (if you’re using any) into a cup with a lid. Don’t blend—instead, shake well for 5-10 seconds. *Note: You may need to heat the honey a bit to help it mix in better.
  • Pour mixture into a glass and place into fridge for 4 hours. This gives the chia seeds time to expand and form their gel.
  • Set aside 2 teaspoons of diced strawberries.
  • Mix the remaining diced strawberries into the pudding (the mixture).
  • Top pudding with the reserved strawberries you set aside.
  • Serve, eat, and enjoy!
